On April 29th I put Claudio trustingly in the hands of Rainer, one of my wonderful trainers of my team, and got on the plane with destination Bali.
Not in order to enjoy a vacation but for an exciting training as Raw Food Chef.
For over a year, I have already been teaching workshops in the area of raw food nutrition and have completed a lot of smaller trainings, and now it was time for me to understand not only the medical approach, which I have studied and taught so far, but also to professionally learn the real, fancy gourmet cuisine.
The health aspect is certainly not neglected here, as we learn a lot about enzymes, nutrients that our bodies need in different life stages, and a lot about fermented foods, which are very important for our bodies, such as sauerkraut, kimchi, or water kefir and homemade kombucha.
And it was very exciting to immerse myself into superfoods once again, as there is a never-ending amount of them and some of them I had not utilized so far myself.
What are superfoods, you will wonder?
Superfoods are plant-based foods that contain a very high and concentrated ratio of valuable ingredients. I have been using them for my smoothies for a long time, e.g. Mesquite, Acai, Maca, Bee Pollen, Spirulina, Moringa powder and some more. It would go beyond the scope of my blog to explain to you, what all these are useful for. You really have to come to one of my workshops for that.
The days fly by and I feel like we have learned so much already! I was especially impressed by our own vegan, raw food yogurt made from young coconuts – unfortunately, they are hard to come by in Switzerland but it tastes good with.
And of course, the raw, homemade zucchini pasta with a heavenly tomato sauce could not be missed.
I don’t have such a sweet tooth and have already produced raw-food chocolate myself.
However, today we were allowed to dip deep into the chocolate pots, and it is always fascinating for me to see how the corresponding fruits look – I have never eaten a fresh cocoa bean before and these are really wonderful experiences and provide you with a certain new appreciation.
We also had the visit of a Spirulina farm on our program.
Spirulina are algae that are very sensitive during their harvest and really require well-founded know-how for their production, in order to let them grow in a nutrient rich and organic way. But it is really an unparalleled superfood.
